Fall for Our New Seasonal Five Star Menu

The cooler temperatures of autumn also bring the warm colors and flavors of our Fall-inspired menu on our signature Five Star Sunset Dining & Jazz cruise. Created by Chefs de Cuisine Norman Soderberg and Kevin Carvalho, the menu features the savory flavors and local produce of the season. The 7-course menu in classic French style includes:

with Crostini and Edible Micro Orchid

and Lobster Au Jus

Intermezzo of Raspberry Rosemary Sorbet

Highest Grade Prime Tenderloin of Beef
with Hamakua Mushroom Risotto,
Autumn Vegetables and Veal Demi-Glace

Pumpkin Crunch and Eggnog Gelato
with White Chocolate, Gold Leaf and Caramel

Our dinner guests will also be treated to the smooth sounds of live jazz music, super premium beverages, white-glove service in the STAR’s elegant Super Nova room, and breathtaking views of the sunset as they cruise along the Waikiki coastline. On Friday evenings, cruise-goers will also watch as the Waikiki fireworks light up the sky above.

The Man Behind the Meal

Chef Soderberg

Meet the man behind our delectable onboard fare – Chef Norman Soderberg! Born and raised in the town of Keaukaha, Hawaii, Chef Soderberg grew up with a deep appreciation for the majestic creatures of the land and sea. This early love inspired him to pursue a career in the culinary field, which prompted a move to the island of Oahu. In his first culinary job at the Chart House in Honolulu, Chef Soderberg learned the basic dynamics and essentials of operating a kitchen, consistently demonstrating a personal desire to learn and grow.

This dedication has since led him to study under a number of renowned local chefs at celebrated local restaurants, including Chef Fred D’angelo of Restaurant Ola and Chef Chai Chaowasaree of Chef Chai. He also served as sous chef of Beachhouse at the Moana, which won multiple noteworthy awards under his direction.

As a member of the Star of Honolulu team, Chef Soderberg consistently delivers the finest in inventive cuisine, while adding a personal, island-inspired touch.
